Oreo chocolate cake from scratch
2:14 PMHi guys!
Finally fond some time again to do thing I love. And of course one of them is baking. So I decided it's time to bake a cake just because, no real reason, just for fun. I think my neighbors didn't complain, they got a big piece. 😉
So here it is, as promised on my IG account (if you're not following me there, check it out @elarosaria), my Oreo cake. Enjoy! 😋
Ingredients:
150 g of flour
1 baking powder
150 g of chocolate (I used 45%)
150 g of butter
100 g of sugar
about 2 tbsp of cacao powder
6 eggs
Frosting and decor:
400 g of Oreo cookies
500 g of Mascarpone
250 mL of cream (for whipping)
200 g of chocolate (I used half 45% and half 70%)
200 g of butter
500 mL of milk (more of less, depending on taste)
Start by preheating your oven to 180°C.
First of all, put 150 g of chocolate and 150 g of butter in a cooking pan on low heat, so that they melt slowly and combine in a smooth mixture. Let it cool of a bit, while you prep the other stuff.
Put the flour and baking powder in a bowl and mix them together until the baking powder is evenly distributed through the flour.
Now you can divide the egg whites and the yolk. Start by whisking the egg whites unil they get quite firm. Then add the sugar and cacao powder in egg yolk and whisk well to get a creamy consistency. Check if the chocolate mixture is not too hot. If it's ready, you can add it into the yolks slowly while whisking. Now put your whisk away, time to start mixing carefully with a spatula. Add some flour and mix. Then add some egg whites and mix again. Continue alternatively adding flour and egg whites until you use up all the ingredients. Your cake is ready to go in the oven now! 😁 Bake it at 180°C for about 30 minutes (make the knife test to be sure - you stab a knife in the center of the cake and if it comes out clean, the cake is baked). Then set is aside to cool off.
On to the frosting! 😊
Whisk the cream. Then take half of the Oreos, split each of them in half and scrape the creme filling out in a bowl. Set the cookies in another bowl, because you'll need them later. Add mascarpone in the bowl with Oreo creme filling. Mix well. Take Oreos that are still whole and crush them into smaller pieces. Combine in the mixture with mascarpone. Then slowly add whipped cream.
Next step is to again slowly melt 200 g of chocolate with 200 g of butter. You're gonna need that soon. Leave it in the cooking pan so it doesn't cool down too much.
Time for the jigsaw part - combining the cake together. 😛
First, cut the cake in half so you get two shallower cakes. Take the first one and put it on the serving plate. use half of the milk and evenly pour it over the cake. Now take the frosting and spread it over the cake. When it's nice and leveled, pour half of the chocolate and butter mixture on it. wait a minute of two for it to cool down and take half of the Oreo cookies you set aside earlier (the ones without cream filling) and crush them over the cake. Now put the other half of the cake on top and repeat the process (milk - frosting - chocolate - crushed Oreos).
